Carrot cookies with chevre

Ingredients

1/2 cup soft chevre
1/2 cup soft butter (melted)
3/4 cup sugar
1 cup mashed cooked carrots
2 eggs
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 cup powdered sugar
1/4 tsp. salt
1/2 tsp. vanilla extract (or other flavoring of your choice)
1-1/2 Tbs. milk

Directions

In a large bowl, combine chevre, butter, sugar, carrots and eggs. Mix thoroughly and set aside. In another bowl, sift together flour, baking powder and salt. Stir butter mixture with flour mixture. Drop cookie dough approximately two inches apart on a lightly greased baking sheet. Bake at 400 degrees for eight to 10 minutes or until when touched lightly with a finger, no imprint remains.

For the icing, blend powdered sugar, salt, vanilla and milk in a bowl. Frost cookies!
Makes about 4 dozen
