Braised Short Ribs

Brown, then slowly bake meaty short ribs until they are tender to make a hearty winter meal for family or friends.

Ingredients

2 1/2 to 3 lbs. beef short ribs
1/3 cup all-purpose flour
1 tsp. salt
3/4 tsp. black pepper
2 Tbs. vegetable shortening
1 cup sliced onions
1 clove garlic, minced
1 cup hot water
1 bay leaf
1 Tbs. brown sugar packed
1/4 cup vinegar
2 Tbs. soy sauce
1 green pepper, cut into rings

Directions

Wipe mean with a damp cloth. Trim off excess fat.

Combine flour, salt and black pepper. Dredge meat in mixture to coat completely. Heat shortening in large skillet. Brown ribs on all sides. Remove to a casserole.

Cook onions and garlic in skillet until golden. Spoon over ribs. Combine water, bay leaf, brown sugar, vinegar and soy sauce. Pour over ribs.

Cover and bake at 350 degrees F for 2 hours. Add green pepper rings. Cook 30 minutes longer or until meat is tender.

Remove cooked ribs and vegetables to a serving plate. Skim fat off drippings. Thicken with a little flour if desired. Spoon drippings over meat and vegetables.

Comments

Good served with hot buttered noodles, mashed potatoes or rice and a green salad.
